If she is on an unmarried partner status, then her conditions of stay would be different to that of a student. I think that she would be free to quit being a student. Switch from student to unmarried partner visa

Hi,

A friend of mine switched her student visa to unmarried partner visa recently, does she still has to finish the course that granted her last student visa. Or she can quit the course, since she is now on unmarried partner visa anyway.

I would not expect you to have any problems with the Home Office. The UK does not stamp anyone's passport when they leave the UK and many countries do not stamp their citizens' passports (or ID cards) when they return to their home countries. Forgot to mention, we find her earliest bank statement is Dec 2005 (rather than Jan 2006).
