I am still enrolled in my current Job .... Will that be a problem
No
is it a requirment to show that I have quit my Job (in preperation to move to UK) at the time of applying for EC?
No

What you can do is specifically request the start date on the visa, when issued, to be deferred. That is, whilst ordinarily the start date on the visa would be the date of issue, you can request that it is deferred for a maximum of 3 months.
Also for accomodation: for how long do I need to show accomodation?
There is no specific requirement. What are you planning? To stay with relatives or friend? Or do you intend getting a hotel booking?

If friends are intending to let you say, yes those friends should write you a letter confirming that, and also confirming that there is space in their place for you to stay ... that the place will not be overcrowded even while you are staying there.
