I think they will reject your case on the basis of your work experience letter from your previous employer.

Well, hope you're wrong :)
I now think the weakest point is the lack of payslips and (ideally) tax return. I'm trying to get payslips now.

As for the letter from previous employer...well, cant do much about it.

I don't think so because you have
- Additional evidence of graduate level experience for the both letters – just printouts of job adverts for similar jobs requiring at least a master’s degree, simply printed out emails without stamps or anything (who the hell would put stamps or signatures on job postings anyway?)
So go ahead and yes, u r right, the tax return adn salary slips are a must for claiming points fopr past earnings...
