US Citizen in the UK for nearly 6 months

I am an American citizen, resident in Morocco. I came to the UK in December 2020 flying from Morocco to visit my sister (a British citizen). However, because of the pandemic, my flight back to Morocco has been cancelled multiple times.

I know that as an American, I am entitled to stay in the UK for 6 months without a visa (deadline june 18th 2021). I sent a request for an exceptional assurance. Meanwhile, I would like to know my options to settle in the UK, work or extend my stay. (Do I have the right to apply for jobs while waiting for their answer?

Please advise me on this matter.
(I cannot go back to the US for I have nothing there anymore)

A visitor visa won't give you any rights to work or settlement - as you know you are not allowed to work (paid or unpaid) whilst on a visitor visa and an employer would want to see your right of work documentation, if they will even entertain a job interview.

So, If I want to settle in the UK, I need to apply for another category of visa within the UK (Work...) ?
I am asking because of the actual pandemic situation, I'd like to at least be able to do something (work for ie) instead of waiting for the borders to be reopened...

Correct.

A visit visa does not have any pathway to settlement. You are expected to leave the UK before or at the end of the visit visa.

As @alterhase58 has already stated, you don't have the right to work (not even as an unpaid volunteer for a charity) in the UK while in the UK on a visit visa and any employer hiring you will be open to exorbitant fines. So it is very unlikely that you will find anybody to hire you.

From the UK's point of view, you can return to the US. Are there no flights back to the US?

As an aside, in UK immigration law, there are very few entitlements. You are allowed/permitted/given leave to remain in the UK for six months on a visit visa.
