how to demonstrate of exercising EU treaty right in Ireland

I am British, registered as a self employed to Revenue in Dubline when I arrived in Dublin in April 2013. On 1 May 2013 I received a latter confirming I have been registered for Income Tax.

I am not believed by Irish Embassy Beijing that I am exercising EU treaty right in Ireland when my wife submits her visa application.

I would like to know what documents apart from bank statement can be satisfied with its concern?

Invoices. And that's to answer a general question. You have not said in what capacity you work. Taxi drivers, market traders and ice cream vendors, for example, might not be emitting invoices. In which case, their own receipts for their outgoing expenses might serve.
