You might want to double check with another source like the Immigrant Council of Ireland, but I think if you guys are unmarried partners, the only option would be the EU1 route, which you can do as you have been exercising an economic treaty right (working) in the UK. It's known as the Surinder Singh rule. Have you been living together for 2 years and can you provide proof?
If not, you could look at marrying in the UK. Once married, you could either apply for the residence card via EU1, or for a stamp 4 on the basis of being married to an Irish citizen.
