Can I enter Uk after the start date?

Hi,
My COS expires on 27/8/2019 (start date tentatively 3/6/19) but I just discussed with my work and they let me start in Dec,
And I was hoping get the visa issued in August so that I can resign earlier to allow some time for relocation.
And I read about that I can only three months earlier than the start date.
My question is what does start date mean? is that mean the date they start sponsoring me or the first date of work?
