I am applying for naturalisaiton in a few weeks and I just had a question regarding the documents required for proving residence in the past 5 years.
If you have all your passports available to show the dates that you have entered and exited the country, do you need to add further documents like bank statements, academic letters, tenancy forms, etc?

Also, what is the process for the referee? I have to give their details on the form I fill then they get an email about me? Do I need to post them anything with my picture? Does the referee need to write anything?

You fil in the details in the form. Once application is submitted, you download and they each have to sign the forms and you have to upload the signed forms with your other supporting documents.

Also, in the part where it says how does the referee know the applicant, I'd need to put 'friend'. Is that fine? that doesn't count as being 'related' to the applicant right?

Friend is fine.

Realted means a relative through marriage or by blood. It is not a friend.

I have recently made a naturalisation application and I’m trying to decide if I should go for a paid appointment. Does that speed up the decision process from the home office?

No. The UKCVAS appointment is not with ukvi. UKCVAS is an agent for biometric enrollment. Whether you pay for your appointment or not has nothing to do with home office
