A few questions about AN form

My wife is applying and there are some questions I would like to clarify:

1)
Question: Do you have a biometric residence permit (BRP)?
She had a BRC card, not BRP, it expired last year. Do I still need to write it's number, despite BRC is not the same thing as a BRP?

2)
Question: Do you have any dependants not applying with you at this time?
We have a 4 years old son, he is not a British citizen, we might get him registered as a British citizen later, what should I choose here?

3) Maybe a question to those who applied recently: When you applied, what was the situation with biometric appointments slots in your cities? Is it possible to find slots in any city as early as possible, cause we are planning 1.5-2 months trip in December, just wanted to finish this step before going on holidays.

Difficult to say, it depends on the city and the demand. Maybe it's best if you apply on your return.

Thanks for your reply. Also there is a section about employment, I am not sure how to fill it properly. She is a self-employed in the UK, the contractor who gives her jobs is located outside the UK. What should I write in the sections like:
Employer or business name
Employer or business address
Tax office reference number (is it UTR?)

Also she is formally employed in another company and gets paysheets (has PAYE reference number). There is no option to put both employment and self-employment details in this section, should I skip this employment?

Also there is a tricky question: When did you first arrive in the UK?

The thing is, my wife's first arrival was in May 2019, using EEA Family Permit. She successfully applied for pre-settled status, received her BRC card and left the UK. She was absent for more than 6 months (documents were stolen abroad) and arrived only in December 2019 using new EEA Family Permit - she applied for a new pre-settled status and received a new BRC card, so usually we count her continious residence from December 2019, not from May 2019.
So what should I write here, her first arrival was in May 2019, but arrival when her continious residence started and hasn't been interrupted started in December 2019.

Doesn't make a massive difference, use Dec 2019 as that led to settlement.
