Retired Finn and South African wife.

My wife and I want to stay in the UK for 2 to 3 years and then return to South Africa.
Our kids work in the UK on their Finnish Passports and have been there for 4 years.
The idea is to use UK as a base to explore the country and Europe during our retirement and of course to see our children.
Problem is that my wife is a South African citizen and I am Finnish.

Can she only stay for 2 years as we might want to prolong it to 3 then come back to sunny South Africa.

She can stay for as long as you are there exercising EU treaty rights; there is no time limit. If you are not working, that would mean self-sufficiency. Therefore for her to qualify for a residence card you will need to purchase health insurance.
