Absence days and no record

Hello,
As you all know that UK border does not stamp on passport when you leave the country. And so my country also not having record for entering the country because we don't need to use passport for entry. So my passports only have the date I enter UK and I have not traveled to any country apart from my home country.
Now the real problem is, how would I tell how many days I have been absence from the UK? I have lost all memories on specific date when I leave the country for the first few years.

Do a Subject Access Request and ask HO for all records held on you.

Don't you have the flight/air tickets etc or holiday/annual leave records from employer?

I am and was on a student visa so I don't have record from employer and....who keeps flight ticket when the trip are done
Another thing, I am pretty sure that I am the near the edge of 540days limit and I plan to apply a Tier 5 youth visa which means that I will and must leave UK to apply for it. Do they have grace period on the days for reason like that? like apply and wait for visa?

No they don't have a 'grace' period for ILR based on Long Residence, 540 IS the limit. There was a refusal posted a few days ago due to being over the limit for long residence. There have also been refusals in recent months with evidence being submitted for compassionate reasons, i.e. parent dying of cancer etc.
Being 'pretty sure' is not good enough because you can be sure that HO does know when you left and returned.
Who keeps things like air tickets and records of absence?? Those that keep up to date with HO requirements for ILR based on either 5 years residence or 10 years long residence.

I have recently only found out about 10 years residence to get ILR so I did't keep any records of it. Guess I will look for other route like T2 after my T5 if lucky. Thank you for quick responds anyway

In that case, unless you do a full Subject Access Request, you won't know. This request has no effect on any application you make by the way, it is purely a record of information HO hold on you.

Umm...Is the SAR a valid document to support any ILR application? In the worst case, home office does not keep/have the record of my landing card...

Normal SAR wont help much. Only if landing was coded (=problematic). I don't know how to SAR entries/exits
As per previous thread only recently have they began to record

I paid one airline a fee for years of frequent flyer accounts data
Etickets in emails. Boarding pass in emails
