Online Set(M) and financial requirements..CONFUSED..

Does online application Set(M) ask for financial details and employment details?
Situation
I left my job and already earned more than 25K since April this year from the same job. Now moving to a different organisation but they are opening vacancies in mid Dec with Jan 2019 Start. So I will hopefully be starting a new Job in Jan 19 with more than £18600 annual salary.
I have following queries and would appreciate any advice.
1. Would I need to use Category B to satisfy £18600 requirement?
Confusion starts now
2. To get a VCAS (new system) premium appointment in Jan for Set(M) for my wife, We need to submit online application somewhere end of Nov or start Dec and at that time I would not be employed but will be employed at the time of premium appointment so if HO ask for financial details in online application then I am confused how to complete the financial part and book the appointment. If I leave it till I start my new job then I wont be getting on time premium appointment.
What will be the way out of the above situation (2)?
