SOC changed - Employer letter

I know this has been answered a few times here but please help me advise in this particular case.
My SOC code originally on my CoS issued 2 yrs ago, now points to a completely different job title so I have asked my employer to issue a letter stating the new updated SOC code from the 2020 SOC list.
My employer refused my request and gave me a letter which contains the SOC code as per my CoS. The reason they stated was that they want to be compliant and are not very comfortable issuing me a letter with a different SOC code from the one that is present in CoS. My salary is 50k so its beyond and above all the salary requirements.
My question is-
1) Will this be an issue? The old SOC code points to a completely different job title and is nowhere related to my job.
2) If I continue to use the letter from my employer, what SOC code should I enter in the ILR application form? New or Old?
3) Is it better to explain in a cover letter?
