PR Application (Student + Worker)

Hi,
Not sure if it's just me but the application form & the guide are a bit confusing and don't seem to be super straightforward. Especially when on the application form it says one thing (like listing sources of income) but if I look at the guide it says "If a relative, friend or other person has been financially supporting you/your sponsor, you must enclose a signed and dated letter from that person confirming that they have been supporting you/your sponsor and for how long.". Is that actually necessary? It's a bit frustrating if that is the case as I have lived here for 5 years now and currently have a job and it seems that I need to prove I had enough money back then? (I mean if I have survived until now and have put a tick in the application form that I have not been using public funds/help from the government during my 5 years that should mean I had enough funds back then?)

And info about myself:
October 2012 -> June 2015 | University Student
June 2015 - Present | Worker (3 companies during those dates, the longest "gap" between work is probably one week)

So far I will be sending my national ID card (valid for years 2015-2020), 2 recent photos, payslips (June 2015-Present, I'll just chuck them all in), 3 EHIC cards that were not issued in the UK (valid dates: "until November 2013", "until November 2014", "until November 2015" - they don't specify the "valid from" date) and my registration certificate received in August 2016 (acquired solely based on my payslips).

I assume my monthly payslips should prove that I have lived here for the last 2 years (my assumptions is it's not possible to work full time in the UK, pay taxes here and live somewhere else) and ... possibly my graduation certificate will prove that I lived here for the other 3 years as a student (it's a full time course, so there should be no way I would be able to attend the lectures and get my degree at a full-time course and not live in the UK at the same time)?

Also it's a bit confusing that somewhere (lost track as I've been reading the guide, the application form and other websites for help) it stated that the ID card should show that I have actually been a EEA national for the specified 5 year period?

I feel like my case is almost one of the simplest cases out there (except for the period being a student) and still while going though the form I feel like it's not straightforward and an immigration lawyer is required (pretty sure in other EU countries PR is probably a one-two page signed form and you're done, as in my country of nationality all the records are kept online for the addresses you've lived at, employment history, education history, medical history, everything). :/
