I am hoping to go to an Eu country with my wife to work for a few months and then both us go to the UK later this year or next. Am I right in thinking that this is allowed under EU rules? Where can I get further information on this online.
Also are some Eu countries easier to get into than others? Currently I am working in Saudi Arabia and my wife is in China, though she will join me in Saudi as soon as she can get the visa.

Any advice appreciated.

Am not too sure but i think if you as brtish living in an EU MEMBER state , then you have right as E U National . you can only excersice your rights when you are out side onather EU state . But if i undersatnd you well ,u trying to come to the uk. So you must go to the British Embassy where you are working as British an apply for your wife who is NON EU, alternatively go to anyEu member state as apply for apply for resident permit for your wife to come to the UK

All EU countries should facilitate your entry. Where are most likely to find work? (that's what I would concentrate on if I were you.)

***As I teach English I think I can find work in many EU countries. My main concern is being allowed to go there with my wife. We applied to go to Holland once and she was turned down for the Schenegen visa. So I am keen to find out if any Eu countries are less strict than others. Also what the procedure is if we are turned down for a visa.

I would reapply to go there for a start. Don't take a rejection for an answer.

The short answer is that they apply common rules so all should be the same.

What are the minimum requirements to apply under Surinder Singh? Is there a minimum salary, length of employment? Can a full time student be also self-employed?

Surely you don't need to avail of this personally? Essentially, the work performed needs to be genuine and effective. The move would need to be for a reasonable amount of time.

The question remains, what would you define as a reasonable amount of time?

Are you aware of any case where the applicant was a full time student and self-employed at the same time, i.e: web developer, 3D modeler, designer?

It's not as much as 40 years and perhaps more than a day.
