Looking for work with only a COA

Hello everyone. I have recently found myself unemployed while my EEA PR application is being considered by the Home Office. The application was made beginning of March and a COA with the right to work was issued.
I have an upcoming interview for a job, but I am worried about disclosing the fact I only have a COA and photocopy of my passport (since original is with the Home Office).
My plan is to only tell the employer once the job offer is made.
Has anyone been through a similar situation and how did you manage to secure a job?
