EEA National Seeking Advice on Unmarried Partners Visa

Hello All -
I am an EEA national that is trying to sponsor a non-EEA national to receive a visa in the UK, through the unmarried partner visa. A couple facts pertaining to us:
- I am an EEA national that currently resides outside of the EEA.
- I am seeking employment in the UK and expect to receive an offer in the next 1-5 months
- My partners is a non-EEA national with which I have lived for over two years.
Our plan is as follows:
- I receive an offer for a job in the UK (thus also providing evidence that I intend to live in the UK in the next 6 months)
- We use this offer letter as part of the unmarried partner visa. We also provide sufficient documentation to prove a relationship akin to marriage for over 2 years.
- Once she receives the visa (which I understand can happen within 3-6 weeks), I accept the offer.
- I then move to the UK immediately / in the near-term
- She moves within a couple months later as she seeks a job in the UK.
Is this a viable plan? A couple questions:
- Do I have to accept the offer or will an offer letter, with a projected start date, be sufficient?
- My understanding is as an EEA national, I do not need to live in the UK at the time of the application, I just need to prove intent to live in the UK (via an employment letter)
- How soon does she have to move to the UK after receiving the visa?
- Misc question regarding the proof of residence: I have largely gone paperless for the last two years for bills. I can provide some originals in regards to payslips, tax forms or receive letters certifying authenticity (e.g. bank statements). To what extent can I supplement these documents with internet print outs of e.g. electricity bills, internet bills, etc? Will these be given zero weight for the application?
