1) With the new system evidence can be originals or copies. Online statements/version is fine.
2) You need around 6 documents from 3/4 different sources evenly spread across the last 2 years i.e. every 3/4 months.
Ideally in joint names or solo names having same address.
Some more examples:
1) TV license
2) Bank accounts
3) NHS letters
4) Virgin/Media Sky contract etc
5) UK driving license
