We have a 2 holidays, one in 10 weeks and one in 12 weeks. It said online 6-8 weeks!!!!

Yes, it can take longer than 8 weeks and up to 6 months if you did not choose/opt for Super Priority service.

Yes. If you submitted it as standard already, you can't upgrade it in the process.
You can cancel your existing application and resubmit it again for the hope of getting a super priority slot, but it's extremely risky and not recommended.

Only possible without losing the fee if done BEFORE biometrics appointment. OP has their biometrics appointment yesterday already.
