The copies of the bills are fine? The PDF of the tenancy agreement is fine? Or both?
Your husband income seems non-salaried because varying and I think its alone might fulfill the financial requirement (if no dependent). £5887.62 ÷ 6 × 12 = £11775.24
My husband is paid 4 weekly, and receives 13 payslips a year. We are not sure if he is salaried or not because his payslips show an hourly rate but his contract shows a weekly wage. I'll include both calculations below.

June £1703.01 (annual bonus of £443.78 included)
June £1257.21
July £1059.09
August £1241.99
September £1253.15
October £1283.74
Total = £10224.34 (28 weeks)
Salaried:
£1059.09 × 13 = £13768.17
Non-salaried:
£10224.34 ÷ 28 = £365.15 (weekly average)
£365.15 × 26 = £9493.90 (26 weeks)
£9493.90 ÷ 6 × 12 = £18987.90
Combined Income:
£11775.24 + £13768.17 = £25561.41
OR
£11775.24 + £18987.90 = £30763.04
Math is not my strong suit so if anyone has any feedback that would be great.
Try to contact Area store manager/other top management and also remind about Tesco moto "Every little Helps". If both/either of you by chance have some savings locally/abroad then can combine it with your income only by skipping Tesco income.
Tesco no longer issues letters with a letterhead, they only have the ability to stamp the letter or they would print it on stationary that has their name on it but it doesn't look official.

You can clarify this on the extra information bit. If ECO is in doubt, they can call Tesco and find out.
Make sure everything else like payslips etc are all there in order.
