On what basis were you applying for a British Passport?
Naturalisation with certificate?
If so, and your mother is a different nationality living in a different country it really isn't going to matter that you got her birthday wrong the passport application form. They will have no records. So I wouldn't bother trying to change it.
But what is likely to happen is that when you go for your passport interview they may ask you as one of the questions when her birth date was. If so, give the date you put on the passport application form - not her correct birthday - as they are checking your identity against the person who filled in the form.

The issue is to provide correct information to IPS or UKBA.
@ Noah....when you can get a simple mistake correct why not do it in time, what your children will put in the form in future about their grandparents DOBs even the section may not be mandatory.
You will have your application number you can use the following link or correct it during yours interview.

The form sort of suggest yes, but for naturalisation cases its
not necessary
just to think about it when i applied for my childs passport (registered as British after I got ILR), i did not put any details for his grandparents
