Jobseeker: email evidence acceptable?

What kind of evidence should be sent to show that I was exercising treaty rights as a jobseeker for two months? I wasn't registered with a Job centre plus and didn't receive any JSA.
I was planning on sending the application/invitation to interview and feedback emails I've got, however, in the guidelines it says to submit letters?! I'm not sure where one would get application/rejection letters from these days; all applications are being done online, at least in the sector I work in.
Could anyone let me know if emails are also acceptable?
Did anyone successfully apply as a jobseeker using emails alone?
Should I send my qualifications and a CV as well to show that I had a good chance of finding work?

CV (& details of academic/professional qualifications) surely helps prove your 'gpow'.

I suppose in 21st century "letter" includes email.
