Just give information for his relevant qualifying period, not the entire time he's been here.
Being a few days off will surely be fine, as long as it is not done with the intention of deceiving the Home Office and there were no absences exceeding 6 months. Mention in a quick cover letter that you are not a 100% sure about some absences but that all were within the prescribed limits. Alternatively, your dad could also do a SAR (Subject Access Request) to see if the Home Office/UKVI has any absence data saved on their systems. It's unlikely with him being an EU citizen, however, it has worked for some people.
