Hoping you can point me in the right direction.
I was born in Portugal, I moved to the UK when I was 3 years old (I am now 29) and have lived my life in London. I am married (my wife is also EEA) and have been in the UK for 10 years.
I am applying for PR for me and my wife and am really confused with the forms I am completing.

1. Who can I use as a sponsor? (is this someone I know that is a British Citizen? Is this my wife? Is this a family member that has also lived in the UK for more than 5 years?
2. When It comes to my sponsors details do I need to provide their paye?, their work history? send off their passport. etc?
3. Do I need to provide information on all my working history from when I was 16 and started working?
and finally
4. I do not have all my payslips and might not have all my P60's whats the best alternative?

1) If applying in own right you don't need a sponsor.
2) No - skip it. See #1
3) It depends. You certainly need to provide details for your 5 year qualifying period if applying in own right.
Who did you come to UK with in first place?
Were they exercising treaty rights?
- it may be that you acquired PR as a minor as the family dependent of an EEA parent/sponsor.
So you may have acquired PR by 2006 (when relevant Directive was transposed into UK law).
If you do apply on that basis fill in sponsor's details in section 2.
4) Letter/s from employer/s, job contracts, P45s, bonus/promotion/payrise letters; tax/NI details obtained from HMRC.
Or if applying as a dependent you would submit sponsor's details of treaty rights.
Either way you stil have to submit proof of residence in UK (& that any absences from UK were within prescribed limits).
Pro tip: It's a longshot but check the passport you used to enter UK back in 19-forgotten.
You may have been stamped into UK with ILR. How cool would that be.
