1) As there isn't a long gap between the two trips to Denmark and Greece, you could try applying through the Greece embassy with a cover letter explaining your travel plan so that they understand you will be traveling to Denmark for a day first, but that your trip to Greece would be longer in duration. But you may want to enquire before you do, to understand whether the Greek embassy would issue a multiple entry visa when there is a gap in-between the 2 trips.
When applying for a Schengen visa, the general requirement is that you apply for it from the embassy of your main destination or if there is no main destination then from the embassy of your first point of entry.
2) Do you have previous travel history in the schengen area? I.e. other schengen visas in the past 3 years? Multiple entry visas are generally issued in such cases and also if you have a proven compliant travel history to the area. You can always request one, with clear travel plan and dates in a cover letter and the embassy will decide whether to issue one or not.
You haven't mentioned whether you are travelling on business or for tourism, if for business your employer may explain the frequent travel requirement in their letter. I also assume that you are a resident in the UK when you say you are staying in the UK - I.e. not a visitor.
