I am working on a 0 hour contract and with the company for more than 6 months. So will my case fall into Cat A or B.

I am British Citizen, and my husband is an Indian Citizen.

Any help on this will be appreciated. Thank you in advance

UKVI/HO will take the lowest amount and calculate by 12 divided by 6 I believe. You need 6 months of at least £1550 per month.

As you are not salaried so lowest wage won't taken rather average of those 6 months will be taken like:
1170.79+1676.52+935.25+2168.06+2209.96+2092.19=
10252.77/6×12= 20505.54

I am renting a room and will start my tenancy agreement from 1st of Dec (for 6 months), as I am returning from India on 30th Nov. This is where me and my husband are planning to live once he gets his visa.

I am not expert but read the other expert members in other threads under your situation is that you should also need original landlord letter permitting your partner stay there and if you share with others then inspection report too.

A Friend of my mother is happy to provide me and my husband with a spare room in their 3 bedroom property until we find a suitable accommodation in the UK.

She lives with her sister, both are unmarried. No one else is living in the property.
She has given us a invitation letter and a NOC letter, would this be fine to submit with my Spouse visa application?

You would need proof of her ownership of the house, or proof of the owners consent. Land registry can help prove home-ownership along with something like a mortgage statement. Proof required is all in the guidance.

My parents have got an housing inspection report - to fulfill the criteria that it is not over crowded
They will provide with a letter stating that they have no objection for both of us staying in their home.
Also, land registry copies of their ownership of the flat.
A mortgage statement from the bank.

Are these sufficient to meet the accommodation criteria ...

My accomodation situation is similar to what you outlined. I applied with the following docs to support this:
- short letter written and signed by my parents (joint homeowners) to say they approve of my husband joining me living at home, and that we can stay withh them rent free for as long as we choose to.
- copy of their passport pages
- copy of HM land registry title deed
- housing inspection report stating that the house will not be overcrowded when my husband joins us (must be no more than a month old)
- letter to say home is mortgage free/mortgage statement

In Appendix 2 you're also required to provide details on how many rooms there are in the house and who lives there
