They are more interested to see your entry/exit dates to/from UK.
For example hypothetical situation:
I travelled to Pakistan via Dubai. I stayed in dubai for 2 days. I exit UK on 2/4/2014 and returned to UK on 26/4/2014. I stayed in Dubai from 2/4/14 till 4/4/14 and reached pakistan on 5/4/14.
I would fill the form
Country travelled to: Pakistan
Date left UK: 2/4/14
Date entered UK: 26/4/14
(all other travels would be during this duration, if any)
In the reason section I would mention: travelled to pakistan via dubai and quote reason e.g family visit, tourism etc.
For example I could go to Turkey from Pakistan and back to Pakistan between 5/4/14 and 23/4/14 and take a flight to UK from Pakistan on 26/4/14 and enter UK then.
So as I said they are more interested for absences entry and exit from UK not the transits.
