FLR(M) = Support Documents Advice Required

Hello all. I've been a bit of an idiot when it comes to this visa renewal and I did not keep documents from the 2018/2019 financial year. I have been able to get copies of this from places like United Utilities and Wigan Council but none of them are true matches of the originals. I have been able to get supporting letters from these institutions to say that they are authentic copies etc. will this be sufficient? I saw some guidance documentation that said ALL DOCUMENTS MUST BE ORIGINALS. It says that copies, with cover letters, MAY be accepted but that this is unlikely without a valid reason. I doubt they will accept that the originals were just lost. So far I have the following documents to support the co-habitation requirement:

GP registration letter from 2017 (original) for my wife.
Joint bank account for me and my wife (copy as all bills generated online but will be stamped by bank)
Tenancy agreement x3 in the name of me and my wife (copies as originals kept in letting agent office, cover letter in hand from letting agent explaining this)
Council Tax bill for 2017/2018 and 2018/2019 in wife and my name (copies but with cover letter from council).
Gas/electric bills in my name (copies as bills generated online only with cover letter from firm explaining this).
Council tax bill for 2018/2019 period in both our names(original)
Water bills in both our names (mix of copies which are identical to original but with huge "COPY" watermark running through them along with cover letter, and original bills)

Is this going to be sufficient? As you can see I have some stuff from 2017 and 2019 which are originals and "allowed copies" which are only generated online, but 2018 is a bit thin on any credible documents, except for 2 tenancy agreements, which should be accepted as originals are kept with letting agent.

I have a rough plan of submitting the following:

Sept 2017: HMRC letter (wife, original) Bank statement (certified copy, me)

Jan 2018: Bank statement (wife, certified copy) Bank statement (me, certified copy)
Feb 2018: Tenancy Agreement (wife and myself, copy with cover letter)
May 2018: Bank statement (wife, certified copy) Bank statement (me, certified copy)
Aug 2018: Tenancy Agreement (wife and myself, copy with cover letter)
Sep 2018: Bank statement (wife, certified copy) Bank statement (me, certified copy)

Jan 2019: Bank statement (wife, certified copy) Bank statement (me, certified copy)
March 2019: Council tax bill (wife and myself, original)
May 2019: Bank statement (wife, certified copy) Bank statement (me, certified copy)
Aug 2019: Tenancy Agreement (wife and myself, copy with cover letter)
Sep 2019: Bank statement (wife, certified copy) Bank statement (me, certified copy)
Oct 2019: United Utilities bill (wife and myself, original)

Jan 2020: Bank statement (wife, certified copy) Bank statement (me, certified copy)
March 2020: Council tax bill (wife and myself, original)

Submission date is late April or early May so I'll stop at this point. I should point out that the bank statements for my wife and I will be 2 separate bank accounts. One will be in my name only, the other in both our names but bills are addressed to my wife.

Will this be sufficient, are there enough sources and spread out evenly enough throughout the period? I would like an original United Utilites or council tax bill for 2018 but that isn't possible. However that period has 3 "allowed copies" that being the 2 bank accounts and tenancy agreements. I know there are more documents here than what is necessary but if I submit the bare minimum I don't think they are spread out evenly enough as I read one document for every 4 months ideally.
