For OP's fiancee, just be honest when she arrives in Ireland for the first time. Show the immigration officer your plan to get married in Denmark and then come back to live in Ireland. Better have some confirmed bookings (flights, hotel, civil office etc) for your wedding. She should get a short-term visitor permission for her first entry.
And yes she will likely be roasted by immigration, just like most non-EU nationals who do not come here as a tourist. Immigration normally asks for a LOT of documents. But as long as she has all the documents in hand, you have nothing to worry about. Just don't lie and say that she's coming to Ireland to visit as a tourist.
Once you have married and come back, show the immigration officer your wedding certificate, and state the intention of living in Ireland with you. She will be given a stamp that allows her to register with GNIB. You then book an appointment with GNIB, bring all the required documents there to receive her Stamp 4.

That is grossly incorrect. Non-visa required nationals do not need a visa to come to Ireland under any circumstances.
