Extending visitor permsission for brazillian

My partner is travelling to Ireland in a few weeks and we intend to get married. We are currently waiting on our immigration interview. We have already given our 3 months notice back in July last year

We have been told that we will only receive one months notice of the date of the immigration interview which has been delayed because of the coronavirus. Originally we were told it would take 6 to 8 months which is between February and April.

So my partner is flying into Ireland at the end of this month. My worry is that we will not receive our immigration interview within the 90 days she’s allowed stay here and therefore not be able to get married. My question is how easy is it to extend a visitor permission. Would the above reason be valid enough and how long might I be able to extend it by for her.
