Is this Postal MIS(Monthly Income Scheme) maintained in UK? Can you withdraw the money as and when you want (readily encasheable)?

MIS- Yes you can. You should get a letter from the Bank (PO)on their official stationery that the funds are liquid and readily available (without any prior notice) for withdrawal as on date.

MF - NO
Evidence must be in the form of cash funds. Other accounts or financial instruments such as shares, bonds, pension funds etc, regardless of notice period are not acceptable.

The problem is, PO deposit schemes usually permit monthly deposits only and not withdrawls for initial lock-in (I suspect that would be the case with your account too). Now if you take monthly statements - you will get three pages with one entry each. This might lead the case worker to believe that the statements show only month end balalnces and not all the transactions.

thats why I advised you to get a continuous statement of transactions for three consecutive months and also a letter from the PO manager that the said statements show all the transactions between period xxx and xxx NAD that at no point in time did the balance fall below xxxxx AND that the funds are readily available for you to withdraw.
