Guidance needed for spousal visa renewal

I was wondering if anyone can assist or provide guidance. My wifes visa was meant to expire on the 22nd of Sept only realising on the 26th. We had to move out of our property and my wife was heavily pregnant, she eventually gave birth end of July. With all the stress over thats few months we didnt realise we were reading the expiry date incorrectly as we assumed thr expiry date of all BRPs in December meant ours would too. Stupid on our part we understand. However since we missed the expiry we wondered what our options are. Her whole life is here including another child. Please help

What you need to do is make an application immediately. No time to waste. She could be put on the 10 years path.
Add all medical reason why you missed the date. You just might get lucky. There's not telling.

Done exactly that. Sent the application yesterday however the only available date for biometrics is from 1st of Nov. Does that matter as long as application is sent as it says on the further steps page bio and documents must be sent before 3rd of December, or should I upload them immediately as there is an option to after confirming the appointment on the 1st of Nov.

Sure, you can upload them at anytime. Better to do that straightaway and you'd have edit permissions until a couple of days before the Bio.

That means you can add documents to your applications (if you suddenly remember something). After the deadline(Bio), you might still be able to add, but it doesn't form part of your application again.
