I want to believe the previous cheques you have been collecting were cashed over counter since you said you just opened an account 3 months ago.
There are 2 options i'm looking at here. The first one is getting details of the paid cheques from the Bank, i mean copies of the cheques stamped paid. This will be very tedious especially when you don't have an account with the Bank and the debit would have gone into your employers account. So whatever checks they will have to conduct to get those details will have to be on your Employers account. That will be very cumbersome, because i will want to believe it is a busy account, except of course you have every detail of the transactions, like the cheque number and the date of transaction. Even if you have those details, the Bank might turn down your request since you don't maintain an Account with them and they don't owe you any obligation.
If you are lucky and this your newly Account is with the same Bank, then you can talk to the Head of Operations (i don't know the operating system in your Country) and explain your plight. I want to believe in the spirit of Customer Service, they will help out, but let me warn you here that it will surely take a while. It will involve going to archives to get copies of the physical instrument used in paying you cash for those months.
The second option which is easier is getting copies of the cheques from Accounts or Finance Department of your Work Place and attach it to your 3 months Bank Statement and expain to HO that you were collecting your salary in cash before the opening of the Account.
Send it with the other Documents you already have, payslips. If it is possible you can get your Employers to write a covering letter with copies of the cheque explaining to them that you were being paid cash through cheque for that period.
Then let us wait for their comments on this, for all you know, they might just be convinced. I don't really believe they are looking out for culprits. When they see a genuine case and you have a satisfactory and convincing explanation for it, they surely yield.
For evidence to show that i have been staying with my spouse for the last 2 years. We had to use a letter from the Children School addressed to both of us, even though i don't think that is one of the things that were actually listed as evidence. In my country we don't seems to have much utility bills so that was a challenge and our electricity bill is always addressed to the Landlord(not everybody though). In convincing them on this we had to send Tenancy Ageement along with it, so that they can see that the name on the bill corresponds with what we have on the Tenancy Agreement.
The point i am trying to make here is that when they see a genuine case outside their normal requirements and it is convincing enough, they will let it go.
Don't forget to stamp your payslips, i even got my employer to write a covering letter with it. I don't even have any salary account, but i provided a tax clearance Certificate with a covering letter from Internal revenue stating that it is valid and stamped with official stamp.
Getting those documents might be a little bit tiring and also tedious, but one step at a time you will eventually get it done
