I am surprised to find that you need to provide photocopies of ALL DOCUMENTS, and ALL stamped PAGES ON PASSPORT, to apply for ILR!

They usually only need originals, and you do not need to send photocopies!

Do I understand wrong? Can anybody confirm please?

In the SET(o) guide:

In addition you should provide photocopies of each of these documents including photocopies of any pages within your passport/s that contain a stamp.

it says you "should" provide. surely its not too difficult to send photocopies to be on safe side. they photocopy everything so it saves time for them.

Thats correct you need to send photocopies of all documents that you submit aswell the original documents.
