You should not take updated statement to the hearing if you know that the fund is less than 50k, the reason is that its better you just tell them you didn't have it with you rather than giving them the one with less funds.
Anyway, most of the appellant hardly have problem with updated statement because they usually focus on refusal point and asking if your business is trading.
On the issue of CAR, if you didn't submit it in your previous application, you should make plans for new application because its a requirement which you didn't follow and judge might use that against you. You can then submit a fresh application within few days if your appeal is refused.
