H1B visa stamping, GC processing and H4 visa - CONFUSED

I have dual nationality (i.e. asian nationality and british citizen). My fiancé lives in the usa and has H1B status. He has applied for Greencard and has recently applied for his I140 which is in processing stage. Now we want to get married in our country or origin. But my fiancé has never travelled outside of usa since getting his H1B. So he needs to get stamping of the H1B visa in the country of his origin.

My questions:
1. What are the chances of my fiancé getting his H1B stamped in the country of his origin. If this is too risky we will get married in usa.
2. If he travelled outside of USA to get his visa stamped how will this effect his current Greencard application (I140)
3. Once we are married I need to apply to go to usa as his dependent, should I use my british passport or asian passport to apply for the dependent H4 visa. And are there any benefits in using one or the other?
